For soft corals, I use a wide wood chisel that I can chip off the rock that the coral is attached to without doing any damage to the coral.
For anemone, that is more difficult as they normaly have their foot deep within rock structures and it is very easy to tear or damage their foot. The only way I ever manage to get them is by finding one that I can get my finger on the edge of its foot and gently rub the edge untill it lets go enough to where I can get my fingertip under the foot. Then working very gently and slowly, lift the foot away from the rock ensuring you do it very very very very very gently. If you tear the foot, it stands a good chance of dieing. If you think you can not remove it without damage, then leave it alone please and look for another that is easier to get to.
